Foodborne illness is caused by biological, chemical, or physical hazards. Most outbreaks involve TCS foods and the 'Big 6' pathogens that workers must report.
- Big 6: Norovirus, Hep A, Shigella, STEC E. coli, Salmonella Typhi, nontyphoidal Salmonella
- Common symptoms: vomiting, diarrhea, jaundice, fever with sore throat
- Workers with these symptoms must be excluded; report diagnoses to the manager
- Document every guest illness complaint and notify the local health department
